Dolsot bibimbap is a variety of the old Korean classic dish, bibimbap. The word “dolsot” translates to “stone pot”, identifying the dish as one of Korea’s famous hot pot meals. It is traditionally served inside the very pot in which it is cooked, which comes out of the kitchen piping hot. Diners appreciate the way that the dish continues to be cooked even after it is placed in front of you; in Korea, after the bulk of the meal is eaten, they will pour water over the burned rice that is left stuck to the bottom and eat the pleasingly crispy mush that results.
