The Itamae’s Knife

What is so special about the tools of the sushi chef’s trade? Traditionally, the knife of an itamae was not a run-of-the-mill piece of cutlery. This was a blade fashioned from carbon steel, very much akin to the famous katana swords wielded by the samurai warriors.
