The word teriyaki is a combination of two Japanese words: teri describes the glossy shine of the sauce, and yaki describes the method that goes into cooking the meat. The famous sauce is made from a mix of soy sauce, sugar, and Japanese rice wines like sake and mirin. The dish is thought to have originated sometime during the seventeenth century, in a time when roasting and grilling techniques were emerging in Japan and the increase of urbanization was bringing about a demand for quick, easy food that could be sold in the streets. Teriyaki was one of the first Japanese foods to be embraced in America, back in the 1960’s, and continues to be an iconic part of Japanese cuisine to this day.
