Hokkigai Sushi

Looking for something new at our Issaquah sushi restaurant? Try some of our hokkigai nigiri. Though not as well known by diners in the United States as many of the bigger names in the sushi world, this is a great addition for any Japanese dinner.

Hokkigai is the Japanese word for a species of surf clam. Chefs take the meat of this clam and place it into a bowl of salt water to extract the sand, after which the valves, connector muscles, and innards are discarded. The remainder is shocked in ice water and then served atop a bed of sushi rice. The end result is a mild, somewhat rubbery meat that pairs well with many other favorite dishes.
