Halibut vs. Hirame

If you’re coming from Japan, you may be confused by the way “hirame” is used in many American sushi restaurants. Indeed, using the word to describe halibut is not technically correct, as this is the Japanese term for the summer flounder. This fish is closely related to the halibut, and may in fact be indistinguishable to most people, but the difference is enough for the Japanese to have a separate word for it. The proper term for our Pacific halibut is “oyhou”.
